ROASTED CAULIFLOWER
  1. • Cauliflower — 1.5 lbs. or about 700 grams (cut into bite sized florets and rinsed)
  2. • Garlic powder — 1 teaspoon (garlic paste about half teaspoon)
  3. • Onion powder — 1 teaspoon (onion paste half teaspoon)
  4. • Taco seasoning — 1 tablespoon
  5. • Avocado oil or any odorless cooking oil — 3 tablespoons
  6. • Red chili flakes (optional) — 1/2 teaspoon
  7. • Garbanzo or chickpea flour — 2 tablespoons
  8. • Salt to taste
CHIPOTLE ADOBO SOUR CREAM SAUCE
  1. • Chipotle peppers in adobo sauce — 1 pepper from the can and a table spoon of the sauce
  2. • Sour cream / yogurt/ coconut cream — 4 tablespoons
  3. • Lime juice — 2 tablespoons
  4. • Cilantro — 1/4 cup (rinsed)
  5. • Garlic — 1 clove of garlic
  6. • Cumin powder — 1 teaspoon
  7. • Salt to taste
TO ROAST THE CAULIFLOWER
  1. Preheat your oven to a 375F (190.5C). Line a baking tray with some aluminum foil.
  2. Into a large mixing bowl add the cauliflower florets and all the rest of the ingredients.
  3. Mix until the florets are coated in the spice mixture.
  4. Transfer it onto the baking tray and roast it for 30 minutes.
MAKING THE ADOBO SOUR CREAM SAUCE
  1. Add all the ingredients into a blender and blend it until all combined.
SERVING THE TACO
  1. Serve the roasted cauliflower and sauce along with your favorite Tortilla, also cut up some lime wedges, onion and radishes. Enjoy!
Notes
  1. • Taco seasoning: You can buy taco seasoning from the store but I choose to make my own because most taco seasonings on the market have sugar in them. These are the spices and herbs that constitute mine: 1 tablespoon of Chili powder, 1/4 teaspoon of smoked paprika, 1/4 teaspoon of red chili flakes, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/4 teaspoon of dried oregano, 1 and 1/2 teaspoon of ground cumin. I don’t add salt to my seasoning but if you wish, add 1 teaspoon of salt. Give this mixture a mix and store it in an airtight container.
