Ingredients
  1. • Persian cucumber — 1 (renders 1 and half cup when grated)
  2. • Fresh dill — 2 tablespoons when finely chopped
  3. • Fresh chives. — 2 tablespoons when finely chopped
  4. • Cream cheese — 1 cup, at room temperature
  5. • Freshly ground pepper — 1/2 teaspoon
  6. • Sea salt — 1/2 teaspoon
  7. • Honey — 1 teaspoon
  8. • Oatnut bread — 1 loaf
Instructions
  1. Peel and grate the cucumber. Then squeeze as much liquid out of it to ensure the sandwich filling is not runny, which will end up making the sandwich very soggy.
  2. Add the rest of the ingredients and give it a mix until everything is combined.
  3. Now, spread couple of tablespoons of the mixture on to a slice of bread. Place the second slice on top. With a serrated or bread knife cut off the sides and then cut them into halves or quarters.
    Make sure to put very little pressure on the bread while cutting because otherwise you could damage the bread.
