EASTER CHOCOLATE COCONUT COOKIE (NO BAKE)

It’s the season for bunnies, lambs and colorful eggs. And some of those colorful little edible eggs need a beautiful edible nest. So I thought, I should share with you my quick and easy cookie recipe that has always aesthetically mesmerized folks of all ages. Its like having a Easter themed Mounds or Bounty candy bar, but lighter in calories.  Easter being right around the corner, you can find these chocolate eggs in almost all grocery stores. Grab a few bags and let’s give those eggs a delicious chocolate nest to rest in.

EASTER COCONUT AND CHOCOLATE COOKIE (NO BAKE)

Ingredients
  1. • Dark Chocolate chips (semi sweet or milk) — 2 cups
  2. • Shredded Coconut (unsweetened) — 4 cups
  3. • Coconut oil — 1 teaspoon
  4. • Kosher salt — 1/8 teaspoon
  5. • Easter chocolate eggs — 20 (at least)
Instructions
  1. Line 2 to 3 baking trays with parchment or wax paper.
  2. In a large microwavable mixing bowl, melt the chocolate chips at 30 second increments until the chocolate melts completely. Make sure not to over-heat the chocolate and keep a close eye on it.
  3. Then add the coconut oil and mix it in until it melts.
  4. Add the shredded coconut and mix until all the coconut is covered in chocolate.
  5. Now, with a spoon or cookie scoop, place the cookie mixture onto the parchment paper. Repeat the process until you run out of the cookie mixture.
  6. Place the egg(s) in the center of the cookies to make the cookie look like the nest. You may need to gently press the eggs into the cookie.
  7. Let the cookies cool completely and the chocolate solidify. This process may take somewhere between 2 to 3 hours.
  8. Transfer the cookies on to a plate.
