- • Dark Chocolate chips (semi sweet or milk) — 2 cups
- • Shredded Coconut (unsweetened) — 4 cups
- • Coconut oil — 1 teaspoon
- • Kosher salt — 1/8 teaspoon
- • Easter chocolate eggs — 20 (at least)
Instructions
- Line 2 to 3 baking trays with parchment or wax paper.
- In a large microwavable mixing bowl, melt the chocolate chips at 30 second increments until the chocolate melts completely. Make sure not to over-heat the chocolate and keep a close eye on it.
- Then add the coconut oil and mix it in until it melts.
- Add the shredded coconut and mix until all the coconut is covered in chocolate.
- Now, with a spoon or cookie scoop, place the cookie mixture onto the parchment paper. Repeat the process until you run out of the cookie mixture.
- Place the egg(s) in the center of the cookies to make the cookie look like the nest. You may need to gently press the eggs into the cookie.
- Let the cookies cool completely and the chocolate solidify. This process may take somewhere between 2 to 3 hours.
- Transfer the cookies on to a plate.
