GINGER PRAWN PINEAPPLE STIR FRY

 

Being able to make a good stir fry is like winning a mini lotto for life, in my opinion it’s like winning a jackpot but I am told I have a habit of exaggerating my feelings.  So, I will let you decide. To make a perfect stir fry the one thing that you always need to do is prep your ingredients ahead of time, which is grabbing all your ingredients, prepping and chopping. That’s because you are working with high heat and you want to give the food on the stove your undivided attention. If you get distracted with prepping ingredients, you could burn your spices, over cook your prawn or your onions and pepper could end up being soggy. I also try consolidating my ingredients that need to go together. Just follow the instructions like a robot and you my friend will also feel like you won a stir fry jackpot.

Ingredients
  1. • Prawn or shrimp - 1 lbs. deveined, washed with tail intact
  2. • Pineapple - 1 and half cup, chopped into 1/4-inch cubes
  3. • Ginger - 1 tablespoon, finely chopped
  4. • Garlic - half tablespoon, finely chopped
  5. • Onion - Sliced, 1 cup (measured after chopping)
  6. • Bell pepper (any color) - sliced, 1 cup (measured after chopping)
  7. • Tamari (Low sodium soy sauce or Liquid Aminos) - 1 tablespoon
  8. • Oyster sauce (Gluten free kind) - 1 tablespoon
  9. • Crushed chili flakes - 1/4 to 1/2 teaspoon (depending on your tolerance to heat)
  10. • Avocado oil (any odorless oil) - 1 to 2 tablespoons
Instructions
  1. Preheat a skillet on medium high. Add the oil and let it heat up, it should take about a minute.
    Make sure to not over heat the oil because then when you add the ginger and garlic, they will burn instead of infusing the oil with its aroma.
  2. When the oil is nice and hot add the ginger and garlic, sauté it for about 30 to 45 seconds.
  3. Add the prawn, slightly lower the flame if you have to. This would ensure the ginger and garlic doesn't burn. Then sauté the prawn or shrimp for 3 to 4 minutes. That is, 2 minutes on each side.
    Depending on the size of your shrimp or prawn your cook time will vary.
  4. Add the chili flakes and stir that in. Then add the sliced onion and bell pepper. Sauté it for just a minute.
  5. Pour the sauce combination in and give it a quick stir. Then add the final ingredient, the pineapple.
  6. Cook this mixture on medium high flame for 2 minutes. You may need to stir it every now then, this is just to ensure nothing is burning.
    Make sure to transfer it to a platter or bowl immediately after its done. If you leave it in the wok for, the veggies and the prawn may continue to cook due to residual heat. In which case over cook everything.
