Liquid Ingredients
  1. • Eggs — 2, large
  2. • Avocado oil or any odorless oil — 1/4 cup
  3. • Sugar — 3/4 cup
  4. • Vanilla extract — 1 tablespoon
Dry Ingredients
  1. • Almond flour or any flour of choice — 2 cups
  2. • Cashew — 1/4 cup, chopped
  3. • Walnut— 1/4 cup, chopped
  4. • Pecans — 1/8 cup, chopped
  5. • Cranberries or raisins — 1/8 cup
  6. • Dehydrated sweetened orange — 1/8 cup roughly chopped
  7. • Unsweetened desiccated coconut — 1/8 cup
  8. • Baking powder — 1/2 teaspoon
  9. • Baking soda — 1/2 teaspoon
  10. • Salt — 1/4 teaspoon
  11. • Ground cardamom — 1/2 teaspoon
DIRECTIONS
  1. Preheat the oven to a 350F (176.6 C). Grease the cake pan with some cooking spray then line it with parchment paper.
  2. In a large mixing bowl, whisk the eggs until its nice and foamy. To the eggs, add the avocado oil, sugar and vanilla extract. Whisk until everything is well combined and the sugar has completely dissolved.
  3. Now into the almond flow add the baking powder, baking soda, salt and ground cardamom. Stir it all in and set that aside.
  4. Add a tablespoon of the almond flour mixture into the dry fruits and mix until the fruits and nuts are coated with the almond flour mix.
  5. Add the almond flour mixture to the egg mixture and mix until it turns into a smooth dough.
  6. Add the nuts and gently fold it in.
  7. Transfer the batter into the cakepan and bake it for somewhere between 45 minutes to an hour. To check if it’s done, sick a tooth pick or knife to the center of the cake. If it comes out clean your cake is ready.
  8. Leave it to cool completely or at least for 30 minutes.

  1. • Dimensions of the cake pan: 8.5-inch-wide by 3.5 inch deep
  2. • Measurements of the dry fruits and nuts: The amount of the nuts and fruits can be tweaked to your liking. The total of the fruits and nuts you choose should constitute to about 1 cup.
