Ingredients
  1. • Tomatillos — 7 to 8, husked, washed and halved
  2. • Green apple (Granny Smith) — 1/2 an apple, chopped in quarters
  3. • Garlic — 4 to 5 cloves, peeled and halved
  4. • Jalapenos — 1 to 2, halved (seeds removed if you don’t like it hot)
  5. • Red onion — 1/4 of a large, chopped in quarters
  6. • Cilantro — 1/2 cup
  7. • Olive oil — 1/2 teaspoon
  8. • Juice of 1 lime
  9. • Salt to taste
Instructions
  1. The first step would be to roast the tomatillos, jalapenos, onion and garlic. You can do this directly on fire or by broiling them in the oven.
  2. This variation is roasted in the oven but you can check the notes on how to roast them directly on the fire. To broil them in the oven, preheat the oven to a 350 F (176.6 C). Then line a baking tray (sheet) with some aluminum foil.
  3. Lay the tomatillos, jalapenos skin side up. The onion can be placed however you like. Then bake it for 8 minutes. Now add the garlic to the tray and broil on high for 2 to 5 minutes.
    The garlic is added at the end because we do not wish to burn the garlic but just roast them. You can tell your tomatillos and jalapenos are ready to be removed from the oven when the skin on them begins to blacken or char in some places.
  4. Remove from the oven and let it cool for a bit. Then transfer the roasted vegetable along with the apple, lime juice, salt and cilantro into the blender.
  5. Give it a whirl until it turns into a course paste. Check for salt and add more salt if needed.

Notes
  1. • Fire roasting: Place the vegetables on to a grill and let it roast. The skin should turn dark brown in some places. You could also char the skin a little. Make sure to keep an eye on them. Remove them as soon as they have just a couple dark spots.
  2. • No oil: If you plan to roast these vegetables directly on the fire, you do not need oil.
  3. • Jalapenos: If you are sensitive to hot food, you can remove the seeds and add the jalapenos to this recipe. Seeds can be removed before they are fire roasted.
