HEALTHY PALEO EGG ROLLS

 

I always say this when I buy any merchandize, quality is everything! Then why do we compromise when we eat? 

My mantra for 2020: Food tastes better with better quality ingredients and most importantly, know what you put in your body. If you are on board with me, here is a delicious egg roll recipe that I think is better than that down the street Chinese takeout!

Ingredients
  1. • Avocado oil or any odorless cooking oil — 1 tablespoon
  2. • Ground chicken or pork— 1/2 pound (about 250 grams)
  3. • Ginger — 1 tablespoon finely chopped
  4. • Garlic — 1 tablespoon finely chopped
  5. • Birds eye chili (optional) — 1 to 2, finely chopped
  6. • Coleslaw mix —
  7. • Red cabbage (optional) — 2 cups
  8. • Coconut Aminos /Soy sauce /Tamari— 2 tablespoons
  9. • Sea salt— to taste (1/2 teaspoon)
  10. • Wraps or tortilla (see notes): 6
Instructions
  1. In a wok or any pan of your choice heat the cooking oil.
  2. To the hot oil, add the meat and sauté until cooked completely which usually takes about 8 to 10 minutes. While the meat cooks season with ¼ teaspoon of salt.
  3. Add the finely chopped ginger, garlic and Birdseye chili, cook for 2 minutes.
  4. Stir in the coleslaw mix and red cabbage, cook for 1 minute. Now add the coconut aminos and let it cook for another minute.
  5. Taste for salt and add more if needed.
  6. Serve alongside or spoon it into your favorite grain-free, gluten-free wrap or tortilla.

Notes
  1. • Vegetarian option: Skip the meat and just follow the steps starting with sautéing chopped ginger garlic in oil. Or replace meat with some mushroom of choice, like shitake. Mushrooms cook fast, so cooking it should not take more than 3 minutes. Follow rest of the directions as usual.
  2. • Choice of meat: Pork can be replaced with the following: ground chicken, turkey, bison, beef.
  3. • Birds eye chili: Can be replaced with ¼ teaspoon of chili flakes or ground pepper.
  4. • Coleslaw mix: The coleslaw mix used in this recipe consists of shredded cabbage, purple cabbage and carrots.
  5. • Coconut Aminos: Is a substitute for soy made of coconut sap. You can use soy sauce but make sure to use the low sodium kind.
  6. • Red cabbage: If skipping red cabbage make sure to add 2 cups of extra coleslaw to balance the flavors according to the suggested measurements.
  7. • Grain free wraps or tortilla: In the photographs and video, almond and cassava tortillas were used. They were prepared according to their package instructions. Whole wheat tortillas also work great in this recipe.
