HOISIN AND MAPLE GLAZED SALMON (BAKED)

 

I’d have to begin this blog by admitting something, I don’t eat fish. Unless, it is deep fried. Which is quite contrary to the members of my family (four legged folks inclusive), they all love fish, especially salmon! And why wouldn’t they? Its that perfect pink I’d love to wear as makeup or as a piece of clothing. Now that the secret is out and I may be looked as a disgrace to my east Indian heritage, lets get to the recipe. This is a wonderful recipe for folks who love to cook but are lazy to cook. The oven does everything for you and all you have to do is to put the marinade together. It’s also a great recipe if you are hosting an impromptu dinner. There is nothing in this world like putting together a lavish spread, effortlessly. I like to make this dish on days that I am not home to share a meal with my family. I’d put this together for them and all they would have to do is put it in the oven and bake it. Of course, every time I do so, I also say a little prayer hoping they don’t burn the kitchen down while I am gone.

Ingredients
  1. • Salmon (Coho, wild caught and sustainable) — 2 to 3 fillet (5-inch-long and 3- inch-wide)
  2. • Hoisin sauce — 2 tablespoons
  3. • Soy sauce or Liquid Aminos — 1 tablespoon
  4. • Lime juice — 1/2 of a lime (about 1 tablespoon)
  5. • Maple syrup — 1 tablespoon
  6. • Butter — 1 teaspoon per filet
  7. • Ginger root — 1 teaspoon, grated
  8. • Garlic — 2 cloves, grated or paste
  9. • Crushed chili flakes — 1 teaspoon
Marinating
  1. Into a small bowl, add the hoisin sauce, soy sauce, lime juice, maple syrup, ginger, garlic and the chili flakes. Give it a whisk or stir until all combined.
  2. Pour a couple of teaspoons of the mixture on to each fillet and let it marinate for somewhere between 15 to 20 minutes.
  3. Set the left over (unused) marinade aside to use it later for glazing the salmon.
Baking the Salmon
  1. Preheat the oven to a 400 F (204.4 C). Then line a baking tray with some foil and lightly grease it with some cooking oil or spray.
    You can use a flat bottom baking dish if you would like. Just make sure the baking dish can fit all the filtets while leaving some space in between.
  2. Now place the salmon onto the baking tray. Also, place the cubed butter onto the salmon and bake it for a total of 15 minutes.
  3. Half way through, somewhere between 7 and 8 minutes, remove the salmon and glaze it with the leftover marinade.
    Make sure not use the marinade that the fish was sitting in. That needs to be disposed to avoid cross contamination.
  4. Return the salmon back into the oven to finish off for another 7 to 8 minutes.

  1. • Maple syrup can be replaced with same amount of honey

I usually serve it with some salad with my light Sriracha Honey Lime Dressing or some steamed vegetables on the side or… (wait for it) some RICE, my recent favorite Coconut rice.
