Ingredients
- • Eggs — 2, large
- • Almond milk or milk of choice — 1/4 cup
- • Vanilla extract — 1 teaspoon
- • Kosher salt — 1/4 teaspoon
- • Maple sugar or sweetener of choice — 1 tablespoon
- • Almond flour — 1 and half cup
- • Tapioca starch or cassava flour — 1/4 cup
- • Ghee or butter — 1 teaspoon
Instructions
- Preheat the waffle iron on medium high.
- In a mixing bowl, whisk the eggs, almond milk, vanilla extract, salt and sugar until all combined.
- Now whisk in the almond flour and tapioca starch until it turns into a smooth batter.
- Brush some ghee on to both sides of the waffle iron. With a measuring cup, pour the batter onto the hot waffle iron, cooking each side for 2 to 3 minutes or until golden brown.
- Serve along with some fruits and maple syrup.
