Ingredients
  1. • Eggs — 2, large
  2. • Almond milk or milk of choice — 1/4 cup
  3. • Vanilla extract — 1 teaspoon
  4. • Kosher salt — 1/4 teaspoon
  5. • Maple sugar or sweetener of choice — 1 tablespoon
  6. • Almond flour — 1 and half cup
  7. • Tapioca starch or cassava flour — 1/4 cup
  8. • Ghee or butter — 1 teaspoon
Instructions
  1. Preheat the waffle iron on medium high.
  2. In a mixing bowl, whisk the eggs, almond milk, vanilla extract, salt and sugar until all combined.
  3. Now whisk in the almond flour and tapioca starch until it turns into a smooth batter.
  4. Brush some ghee on to both sides of the waffle iron. With a measuring cup, pour the batter onto the hot waffle iron, cooking each side for 2 to 3 minutes or until golden brown.
  5. Serve along with some fruits and maple syrup.
