PESTO PIZZA WITH CHICKEN

 

I have always wondered if I will ever have abs, and I also know the answer to it— Nope, because I love pizza too much.  This particular pizza is quite different from the traditional ones, when you put it on the table it looks, smells and tastes like a gourmet pizza at a swanky pizzeria. Whether you love to cook or you cook to survive this pizza is so quick that I always have the needed ingredients handy. On days that cooking is my last priority, I throw this pizza together in less than ten minutes. It works great as an appetizer or a complete meal. My favorite part about this recipe is that most of the ingredients can be refrigerated or frozen. So really, all you have to do is open some jars and bags and put this together. Now about the recipe, I have replaced the traditional pizza sauce with some pesto. I also use frozen crusts from the market. Grilled chicken also from the freezer section, although I make sure I use grilled chicken breast seasoned only with salt and pepper, or maybe garlic? Because garlic just makes things taste better.

 

INGREDIENTS

  • Pizza base (gluten free or gluten) — Frozen (10 inches)
  • Pesto sauce — 3 tablespoons
  • Garlic powder — 1/4 teaspoon
  • Red chili flakes — 1/4 teaspoon
  • French Bistro or poultry seasoning — 1/4 teaspoon
  • Grilled chicken breast — 1 cup, (thawed and cut into bite size pieces)
  • Sundried tomatoes — 3 tablespoons
  • Mozzarella — As much as you want
  • Olive oil — 1/4 teaspoon

DIRECTIONS

  1. Preheat the oven according to instructions printed on the back of your pizza crust packet.
  2. Now, on a baking pan or pizza stone lay the pizza base, and with a pastry brush generously brush some olive oil all over the crust.
  3. Then layer the pizza evenly with some pesto sauce.
  4. Time to add the toppings — chicken, sundried tomatoes, and mozzarella cheese.
  5. Evenly sprinkle the garlic powder, French bistro seasoning and red chili flakes. And finally, the cheese.
  6. Bake it according to the suggested time on the package. It sometimes may need an extra minute or two for the cheese to melt.
  7. Let it sit on the counter for a minute or two, then cut it into desired slices and enjoy!
