When making this Salsa make sure to use fresh cilantro, garlic, onion, and most importantly lime juice. This recipe is a must try with some eggs cooked in your favorite way or some potatoes.

Ingredients
- • Diced or whole canned tomato(fire roasted) — 1 can (14.5 oz. or about 2 cups)
- • Cilantro — 1/2 cup, rinsed and roughly chopped
- • Onion (red or white) — 1/4 cup, roughly chopped
- • Jalapenos — 1, roughly chopped
- • Garlic — 3 to 4, peeled and roughly chopped
- • Lime juice — 1 ½ limes, 4 to 5 tablespoons
- • Ground cumin — 1 teaspoon
- • Salt to taste
Instructions
- Add all the ingredients into a blender and blend it until it turns into a course paste.
Consistency is very important in a salsa so check on it every 30 to 45 seconds until it reaches the aforementioned texture.
Notes
- • Canned tomatoes: The canned tomatoes used in this recipe do not have any added ingredients but for the fact that they are fire roasted. If you cannot find fire roasted canned tomatoes, you can fire roast them on the flame by charring the tomato skin over a gas stove. Make sure to remove some of the black (charred) skin. Excessive charred skin could make your salsa bitter. You can also broil the tomatoes in the oven. To do so, line a baking sheet with some foil. Cut the tomatoes in half and place them skin side up in the broiler. Broil on high until the skin starts to char. Remove and let it cool completely. Whether you are broiling it in the oven or on the stovetop, they should render about 2 cups post broiling.
- • Ground cumin: To add a little more smokiness to the recipe you may also dry roast the cumin by adding it to a dry pan that was heating up on medium heat. Keep stirring until the cumin turns slightly darker in color and smells smoked. This process should take about 45 seconds to a minute. Then immediately transfer it to a bowl so that it doesn't burn on the pan.
