GREEK STYLE GYRO SANDWICH

If you are all about meal prep this year, this is the recipe for you. Make it ahead for the week and it also freezes beautifully. This video was shot before the Holidays had started and I just had it yesterday, 10 days after the New Years and boy it tasted just as good.

For those looking for grain-free pita bread options, my Paleo flatbread recipe goes really well with this one. Hope you enjoy this recipe just as much as we do in our house.

INGREDIENTS

Sandwich

  • Pita bread (or paleo/ gluten free flatbread) — 4
  • Persian cucumber— 1, sliced
  • Roma tomato — 1, sliced
  • Yellow onion — 1 medium, sliced
  • Avocado oil (or any odorless oil) — 1 teaspoon 

Gyro meat

  • Ground beef (85/15) or lamb — 2 pounds
  • Yellow onion — 1/2 medium, cut into quarters
  • Garlic cloves — 4 to 5 peeled
  • Dried oregano — 1 tablespoon
  • Ground cumin — 1 tablespoon
  • Ground pepper — 1/2 teaspoon
  • Iodized sea salt or Kosher salt — 1 teaspoon

Yogurt sauce

  • Greek yogurt — 3/4 cup
  • Garlic — I clove, peeled and crushed
  • Lemon juice — 1 tablespoon, fresh
  • Iodized sea salt — 1/2 teaspoon 

DIRECTIONS

Gyro Meat:

  1. Preheat the oven to a 350F (176.6C). 
  2. To a blender add the onion, garlic, spices and salt; give it a quick whirl. This is just to ensure the herbs get a head start. Now add the meat and blend it until all combined and turns into a dough like texture.
  3. Transfer the mixture into a pre-greased loaf pan (measures approximately 9 by 5) and bake for 1 hour. 
  4. Let it cool completely then with a sharp serrated knife cut it into thin slices.
  5. To roast the onion and gyro meat, heat a skillet with avocado oil. Add the sliced onions and gyro meat.  Sauté for 3 to 4 minutes until the gyro slices look toasted and onions look caramelized on the edges.

Yogurt sauce:

  1. In a bowl combine all the ingredients and whisk until everything is well combined.

Assemble the Sandwich:

  1. Spread each pita bread with a thin layer of yogurt sauce, followed by slices of gyro meat and sautéed onion. 
  2. Top it with sliced tomatoes, cucumber and finish with additional yogurt sauce.

NOTES:

Choice of meat: Beef can be replaced with lamb, or  a combination of lamb and beef, bison or turkey.
